Have you committed to low-carb eating, but are tired of the usual eggs and omelettes for breakfast day after day?
It can be tricky finding breakfast recipes that are healthy, low in carbohydrates, delicious, yet still help you to eat a little outside of the box. We found one such recipe that fits the bill on all fronts… and it can be used for breakfast, lunch and dinner, too!
“Paleo Cauliflower and Spinach Breakfast Butterfly Bread” by Goingcavewoman.com is a yummy low carb breakfast “bread” that contains no grains, yet can be used as a base for a number of different meals (though it is also delicious on its own).
It can be topped with many tasty breakfast and dinner options such as eggs and fresh herbs, bacon, grilled or roasted veggies or it can be used as the crust for a healthy, home-made mini pizza or as the “bun” for a mouthwatering fork and knife burger (to name just a few).
This breakfast “bread” also freezes well, so it is a great “make-ahead” item. Just reheat in a pan with a little olive or coconut oil.

Paleo Cauliflower and Spinach Breakfast Bread

- Touch of Coconut Oil – for saute
- 1 Cauliflower (the author recommends one that is about 6 inches in diameter)
- ½ Onion – Diced
- 1 Cup Spinach – Fresh or frozen
- ½ Cup Nuts – Ground (optional)- almond, cashew, pecan, etc (avoid peanuts and walnuts as they can feed silent infections)
- 2-3 Free Range Eggs
- 1-2 Cloves Garlic – Crushed
- Any herb of choice, fresh or dry – Optional (Fresh is best!)
- Freshly Ground Sea Salt and Black Pepper
- In a food processor, chop the cauliflower until it resembles breadcrumbs.
- In a skillet, melt coconut oil and heat the cauliflower, garlic and onion until it browns slightly, 10 mins.
- Beat eggs in a bowl and add cauliflower mix and the remaining ingredients. Stir.
- Place parchment paper on a baking tray and spoon mixture into rounds (or use a butterfly cutter) onto the tray. Use a cookie cutter for a perfectly round shape.
- Bake at 350F for 15 minutes until browned.
